Creamy Broccoli Chicken Mini Pies

This was extremely easy to make and very tasty! Husband approved!
Prep Time: 20 minutes 
Bake Time: 20 minutes 
Serves 4
INGREDIENTS
  • 8 oz. Neufchâtel cheese
  • 2 Tbsp. butter
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder
  • Salt and pepper to taste 
  • 1½ cups cooked and shredded chicken (I used canned for quickness sake) 
  • 2 heads fresh chopped broccoli
  • ½ cup frozen corn
  • 1 box refrigerated Pie Crust
INSTRUCTIONS
  1. In a large microwave safe bowl, combine Neufchâtel cheese and butter. Microwave in 15 second intervals until slightly melted and able to stir until smooth.
  2. Add onion powder and garlic powder to cream cheese/butter mixture and stir well. Add salt & pepper to taste. 
  3. Add chicken, chopped broccoli and frozen corn to cream cheese mixture. Stir until well combined.
  4. Unroll both sheets of refrigerated pie crust dough. Cut each of the round pie crusts into quarters.
  5. On one quarter of dough, put about 3/4 cup of cheese/chicken mixture. Place a second quarter of pie crust dough over the top (make sure it lines up with bottom quarter) and pinch seams to seal off. You can fold it over, roll it, press with a fork for a prettier look. 
  6. Repeat until you have 4 pie pockets. Cut about small slits on the tops of each pie pocket for breathing. Place on parchment paper on cookie sheet. 
  7. Place extra filling in baking dish, then cover. 
  8. Bake both at 400 degrees F for about 20 minutes or until tops are golden brown. 



Thoughts after making these:
1.  Could just make an entire pie with this filling and it would be quicker and just as tasty. Mike likes the filling of things best and said the ratio here was off; there was a lot of crust. 
2. A little Parmesan, parsley and garlic would have been nice on top.
3. Original recipe called for just 1 1/2 cup broccoli. I'm glad I added more. It was nice to have a little extra filling with all that crust. Not much really fit inside. 
4. Take your dough out of the fridge about 20 minutes before you are going to use it. It will be easy to pinch together v
5. Original recipe called for cream cheese. I don't think that matters. Neufchâtel cheese is always a good substitute. 
6. Original recipe called for twice as much butter. It just seemed like a bit much. I might even try leaving it out completely next time. 
7. Original recipe called for garlic salt. I used garlic powder instead. The salt seemed unnecessary.
